Dried flowers can be one of those things that clients love, hate or are indifferent to. It is important to know the overall aesthetic your client is going for, and showing them lots of photos of the general style they are wanting, which may or may not lend itself to dried florals. If you think their desired aesthetic would be enhanced by dried flowers, ask your client about what they think using photos of arrangements that incorporate dried material. Use positive language when describing how they can enhance an arrangement, for example, "dried flowers integrated into your florals can add some lovely, subtle textures and muted hues that can be difficult to accomplish with fresh flowers alone."
Your client should be on board with a particular color palette, size, shape, etc., but how that is translated in the end should be up to you as an artist. Ideally you communicate with your client your vision, so they don't have to worry too much about the particulars, and you can use the materials you feel will best achieve the aesthetic they are dreaming of.
